Potatoes and Klobase (Sausage) Soup

3 c. water4 large peeled & diced potatoes
1/2 c. chopped onion1 lb. sausage
(fresh green onion are best)
1/2 tsp. black pepper
1 tsp. salt1 Tbsp. fresh chopped parsley

Precook sausage for 30 - 35 minutes before adding to remaining ingredients to cook. Take off casing, Bring water, potatoes, and onion to a boil. Cook until soft. Add sausage that has been cut up in 1/2 inch lengths. Simmer for 20 minutes. Serve hot. (Can be cooked omitting sausage.)
